Rice Cooker Spanish Rice

Ingredients

  • 1 standard cup(not rice cooker cup) Jasmine rice (or long grain rice)

  • 1 cup chicken broth

  • 1 cup canned diced tomatoes with sauce (do not drain)

  • 1/4 cup onion, chopped

  • 2 cloves garlic, minced

  • 1 tablespoon butter

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon oregano

  • 1/2 teaspoon kosher salt

Directions

  • Rinse the rice in a mesh strainer, ensuring to shake out excess water well.

  • Add the rice to the rice cooker pot along with chicken broth, diced tomatoes with their sauce, garlic, onion, butter, and seasonings. Stir the ingredients together.

  • Set the rice cooker to “cook” or press “start,” depending on the cooker’s functions, and let it do its work.

  • When the rice is finished, fluff it with a fork and serve.
