
Rice Cooker Spanish Rice
Ingredients
1 standard cup(not rice cooker cup) Jasmine rice (or long grain rice)
1 cup chicken broth
1 cup canned diced tomatoes with sauce (do not drain)
1/4 cup onion, chopped
2 cloves garlic, minced
1 tablespoon butter
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon kosher salt
Directions
Rinse the rice in a mesh strainer, ensuring to shake out excess water well.
Add the rice to the rice cooker pot along with chicken broth, diced tomatoes with their sauce, garlic, onion, butter, and seasonings. Stir the ingredients together.
Set the rice cooker to “cook” or press “start,” depending on the cooker’s functions, and let it do its work.
When the rice is finished, fluff it with a fork and serve.
